She will demonstrate the preparation of black bean-sweet potato quesadillas with coconut-cilantro rice and chipotle slaw; pasta with tomato sauce, tempeh meatballs, & pumpkin seed parmesan; and Breakfast for Dinner: a tofu scramble with roasted veggies & potatoes. Sample sized portions of each meal will be served.
